I'm a bit embarrassed to admit that my first experience with Chicken and Dumplings was the little microwavable Dinty Moore cups from the grocery store. But I have since graduated to the real thing.
I was surprised that I was able to make this one as healthy as I did. Chicken and Dumplings is typically quite creamy and involves a lot of starch, making it a challenge. But I switched up the meat (clearly, because I called it turkey and dumplings) because turkey is a bit leaner than chicken, but it is still high in protein. I also altered the thickener to be able to cut down a bit on the calories and carbs.
These swaps allowed me to decrease the calorie count by almost 20% and the fat content by over 60%. This is a way to enjoy a rich and creamy soup without derailing your nutrition plans.
