Reduced-Fat and -Calorie Beef Stroganoff

I enjoy beef stroganoff. It's beefy, creamy, tangy, and goes good on top of different starches. This particular recipe uses egg noodles, since that's what I'm used to, but you could also use mashed potatoes, mashed cauliflower, or rice instead.
One of the things many people do when trying to make beef recipes healthier is to switch out the beef for poultry or another lean protein. However, doing that in this recipe would compromise the dish too much to make it worthwhile. It's just not stroganoff without the beef. So, I changed the cut of meat to a leaner one, and then made other ingredient swaps to balance it out. I made swaps of the noodles, the cooking fat, the thickener, and the deglazing liquid.
These swaps knock off 276 calories, 19 grams of carbs, and 18 grams of fat. This way, it fits neatly into my nutrition plan without me having to deprive myself of the richness provided by beef stroganoff.
