I love biscuits and gravy. It's not something I grew up with, but it's something I now seek out on a breakfast or brunch menu, especially when I'm in the mood for something that feels rich and fatty. I remember going out for breakfast in the morning and seeing these skillets on the menu that featured potatoes, meat, eggs, cheese, and sausage gravy, so the applications of this recipe could be wide. Therefore, it would make sense to tweak this recipe again so that it serves my nutritional needs while also tasting great.
This sausage gravy could be used in a skillet, like I mentioned, or over biscuits. Or probably anything. You can use your imagination.
To make this recipe lower in fat and calories, I swapped the sausage, cooking fat, milk, and thickener. The resulting recipe is 1/3 of the calories and 1/5 of the fat. This is not about restriction. It's not about "not feeling guilty" because you should never feel guilty for feeding yourself. This is about making minor adjustments to your diet to make it more nutrient-dense and beneficial for your overall health and wellness goals.
The sausage I found and included in this recipe was a link sausage that lacked a casing, resulting in a texture different from the typical ground sausage. Therefore, I had to dice it. If you can find a ground chicken or turkey breakfast sausage that suits your taste, please let me know in the comments. You might be able to use those pre-cooked patties, but I wanted to see if you would get the fat and flavor out of those.
